What jobs are there?

There's a demand for all sorts of jobs, but not all jobs. Needless to say, a friend of mine who wanted to do photography in Japan, never made it. However, someone, I've heard about, tried to set up a massage and aroma therapy parlour. I haven't heard more about this venture.  

What sorts of people do they look for?

Generally, they want people who will work, and know something that the locals don't. That is, you need to have a specialty for them to prefer a foreign national. It's only fair, our companies do the same. You've got to be prepared to work hard, and be every bit professional as they expect someone in that position to be.
